Never experienced swelling redness, and itching after eating delicious food? Or even to feel the tightness? If so, chances are you have allergies to food. Although the number of events a little, but food allergies should also be considered because its effects can lead to fatality. Food allergy is an abnormal response triggered by the presence of food that the body’s immune system. Allergic reactions that occur can cause serious incident.
Mechanisms of Food Allergy
Immunological reaction of the body affects the incidence of food allergies. This reaction involves the immune globulin, a protein that helps the body’s immune response, rather Imonuglobulin E (IgE) which form the body’s immune response. Immune responses that appear in allergic reactions through two stages, namely stage allergen sensitization and elicitation phase.
Sensitization Phase
Sensitization phase occurs when the body produces specific IgE antibodies. Sensitization phase is also called the induction phase, a first contact with an allergen (ie when eating food allergens).
Elicitation Phase
Elicitation phase occurs when there is repeated exposure. When exposed to food (allergen) the same, the protein will bind to molecules on the cell mediators (basophils and mast cells cells). This elicitation phase causes the body to secrete molecules that cause inflammation (such as leukotrienes and histamine). Effects that arise as well as the severity of the allergy is influenced by the concentration and type of allergen, route of exposure, and organ systems are involved (such as skin, gastrointestinal tract, respiratory tract, and blood)
